Local Canteen, Dibuk House and shhh. bring Southern Thai cooking and Phuket Town’s bar culture to Sukhumvit 22 for two nights only, 28 and 29 August.
BANGKOK, AUGUST 2026. Carito’s, the Thai-Latin restaurant on Sukhumvit 22, is handing its kitchen and its bar to three of Phuket’s most talked-about names for two nights only. On 28 and 29 August, Local Canteen brings its Southern Thai cooking north to take over Carito’s kitchen, while Phuket Town bars Dibuk House and shhh., the latter a Tatler Thailand Best 20 Bar for 2025, run a guest shift with four cocktails built around a Phuket twist.

Carito‘s has always run on a single instinct: that two kitchens far apart on a map are often after thesame thing, and the honest move is to let them meet as equals rather than blend them into something neither would recognise. It continues Carito’s Thai-Latin collaboration series, following a successful June dinner with modern Thai restaurant Anakade, each edition pairing a visiting Thai kitchen with Carito’s own. That is the logic behind its menu: Latin American cooking made with the best of Bangkok’s local ingredients. This takeover turns that idea outward. Instead of a Thai ingredient meeting a Latin technique inside a single dish, it is the whole of Phuket’s Old Town, its food and its bar culture, meeting in Carito’s room for two nights.
Head Chef Korn from Local Canteen takes over Carito’s kitchen. A favourite with both locals and tourists on the island, it tells the story of Southern Thai food through a fresh perspective, served à la carte across both nights. Its Khao-yum Local Canteen, the namesake dish of Southern spicy rice tossed with herbs and a family-recipe Thai anchovy relish, and its Ko-Lae Lamb, grilled and marinated in Southern Muslim curry, are the flavours that give the takeover its backbone. Around them, the à la carte menu runs the full Southern spread: Phuket-style Prawn Fritters, curry-fried with herbs, to start; a grilled Thai Tajima wagyu bavette with Southern tamarind chilli sauce; and coconut dumplings in sweet coconut milk to finish.

The bar programme comes from two of Phuket Town’s most distinctive names. Dibuk House, with bartender Wynn behind the bar, is built on the balance between old Chino-Portuguese charm and modern Western technique, the same old-meets-new tension that defines the neighbourhood it comes from. shhh., with bartender Boom pouring, is hidden inside a Sino-Portuguese colonial building in Old Town and named one of Tatler Thailand’s Best 20 Bars for 2025. One of Phuket’s best-kept secrets, it comes out of hiding in Bangkok for two nights only.



Together, the bars will pour four special cocktails, each a Phuket twist reworked for a Latin setting. From Dibuk House comes the Rusted Flower Fizz, an Anong gin highball with smoked melinjo, honey osmanthus, and pink grapefruit tonic; from shhh., the S-Tropicana, built on a roasted-coconut-infused Lilit spirit with khao-mak, budu mango, mezcal, and a jasmine-roasted-rice whip. Spirits for the night are supplied by Lilit Spirits and Nakin.
Across the evening, guests move through both floors of the address: Local Canteen’s Southern Thai à la carte in the Carito’s dining room on the third floor, and the Dibuk House and shhh. It is designed to be shared and worked through slowly, the way both a Latin table and a Southern Thai one are meant to be. The full food and cocktail menus drop closer to the date.
The takeover runs Friday 28 and Saturday 29 August, 6 pm to 11 pm each night, across Carito’s (3F) and Toma y Toma (2F) at Sukhumvit 22. Seats are limited, and both nights are expected to sell out. Reservations are through Carito’s platforms only via email, DM, or Chope.
